Baobab & Banana Smoothie

  • 1 ripe banana
  • 1 tbsp sugar (or to taste)
  • 1 cup crushed ice
  • 1 tbsp baobab fruit pulp
  • ½ cup plain yoghurt or cream
  • 1 banana (garnish)
Peal and mash banana then add sugar and crushed ice.
Mix baobab and yoghurt (or cream) together.
Place both mixtures into a blender together and blend until smooth.
Pour into glass and garnish with sliced banana.

Alternative:
Add any fruit which is in season e.g. mango, pineapple, strawberry.


Baobab & Honey Milkshake

Smooth, delicious & nutritious
  • ½ cup milk
  • 2 tbsp baobab fruit pulp
  • 3 scoops plain ice-cream
  • 3 tbsp plain yoghurt
  • 2 tbsp honey
  • Honey to garnish
Mix milk and baobab together.
Place in blender with ice-cream, yoghurt and honey.
Blend until smooth.
Pour into glass and garnish with a twirl of honey.


Baobab Juice

Wonderful refreshing drink on a hot day.
  • 1 liter warm water
  • 2 tbsp baobab fruit pulp
  • 2 tbsp sugar (or to taste)
  • Slice of lemon or orange to garnish
Mix water, baobab and sugar together in a large jug.
Stir until the sugar has dissolved (the baobab will cloud the mixture).
Place in fridge for 1 - 2 hours.
Serve chilled with a slice of lemon or orange.


Baobab & Banana Jam

  • 1kg unpeeled bananas
  • 4 cups sugar
  • 30ml lemon juice
  • 1 cup water
  • 1 cup baobab fruit pulp
Peel and mash bananas until smooth.
Mix in sugar and lemon juice.
Place in heavy based saucepan and bring to the boil, stirring continuously.
Mix water and baobab together and add to banana mixture.
Continue to boil, stirring continuously and removing foam, until setting point.
(If you have a thermometer this is at about 100ºC. Alternatively test setting point by putting a tsp of jam on a cold plate, wait till it cools and then check if it has set)
Bottle in sterilized bottles and cap immediately
